Penne with Italian Sausage

Ingredients
- 2 Can (28 oz.) Crushed Tomatoes
- 1/2 Med. Red Onion, finely chopped
- 3-4 Cloves Garlic, minced
- 2-3 Sprigs Fresh Basil
- 1 lb. Italian Sausage (mild or hot), cut into bite-sized rounds
- 1/4 Cup White Wine
- 1-2 Tbsp. Extra Virgin Olive Oil
- 16 oz. Penne Pasta
- Salt and Pepper, to taste
Method
Sauté onions and garlic in olive oil over medium heat until onions are translucent.
Add sausage and sauté until sausage is no longer pink.
Add white wine, let simmer for a few minutes.
Add tomato sauce and stir well to combine.
Add fresh basil, salt, and pepper.
Let simmer for 4-5 hours, or in a medium slow cooker.
Cook penne al dente in salted water.
Separate sausage from sauce into a serving bowl. Remove and discard basil, if desired.
Add pasta to a serving bowl and toss with sauce. Serve sausage on top of pasta along with parmesan or pecorino cheese.
Serve with parmesan or pecorino cheese and a slice of crusty bread for an amazing meal!
