Soft Molasses Cookies
These soft molasses cookies came from a recipe in my grandmother’s recipe box. I was excited to try them, and they came out fantastic. Molasses cookies have been around since the 1800’s, but I don’t recall ever trying them. They’re warming and not too sweet- the perfect cookie for a quick treat without feeling too guilty.

Ingredients
- 1 Cup Molasses
- 1/2 Cup Sugar
- 1/2 Cup Shortening
- 1/2 Cup Hot Water
- 1 tsp. Salt
- 1 tsp. Ginger
- 1-1/2 tsp. Baking Soda
- 1 Egg
- 4 Cups Flour, or enough to roll or drop.
Method
In a large bowl, combine flour, baking soda, salt, and ground ginger.
In a mixer or separate bowl, cream together shortening and sugar until light and fluffy. Add molasses and egg, combining well.
Add the flour mixture a little at a time until fully incorporated.
Bake at 350ºF for 10-12 minutes, and let cool for 5-10 minutes, or until you can’t stand to try one.
