Wine and Herb Marinade
This wine and herb marinade has been the secret to my tri-tip sandwiches, which have been a crowd-pleaser since I developed it. The sweet wine, garlic, and parsley add a bright balance that perfectly complements the smoky depth of flavor from grilling over hot coals. This marinade works great on other meats like pork tenderloin or prime rib.

Ingredients
- 1 bunch Parsley, finely minced
- 1 Med. Yellow Onion, finely minced
- 4-6 Cloves Garlic, finely minced
- 2C Red Wine
- 1/4C Olive Oil
- 1-2 Tbsp. BBQ Rub (optional)
- 2-3 tsp. Kosher Salt
- 2-3 tsp. Black Pepper
Method
Combine all ingredients in food processor or blender and puree.
If marinating a large chunk of meat, poke holes in it with an ice pick or tenderizer and submerge in marinade.
Marinate meat in a Ziplock bag for at least 4 hours, but for best results, overnight.
My favorite way to use this marinade is to grill the meat over lump charcoal for a smoky flavor, then slice it thin for a delicious sandwich!
