Tuscan Style Pork Roast
I made this Tuscan style roast pork for dinner one night, and it’s so simple that I had to share it. This pork roast was served with garlic-sage Cannellini beans but would go great with my single-pan mini potatoes or my gourmet mashed potatoes, creamy polenta, or any other side you can think of. Pro Tip: after cooking, let it cool and refrigerate completely, then slice thin and make an amazing sandwich!
Tuscan Style Pork Roast
This Tuscan style pork roast is extremely easy to make and will be a hit for dinner.

Ingredients
- 2-4 lbs. Pork Shoulder Roast
- 2 sprigs Rosemary, finely chopped
- 3 cloves garlic, finely chopped
- 1 lemon, juiced
- 2 Tbsp. Olive Oil
- Salt & Pepper
Method
Finely chop garlic and rosemary, muddle with olive oil and lemon juice.
Cut a diamond pattern on top and bottom of the roast, about 1” deep.
Salt and pepper the roast well, then spread the rosemary-garlic olive oil mixture all over, making sure to get it inside all of the cuts.
Using butcher twine, tie the roast with an optional sprig of rosemary on top.
Place on a roasting pan in a 375° oven for 1hr 30-45 minutes.
Let rest 10 minutes before slicing.
After cooking, you can refrigerate completely and slice thin for amazing sandwich meat.
