Ingredients
MUFFIN INGREDIENTS
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/2 teaspoon kosher salt
- 2 teaspoons baking powder
- 1/3 cup vegetable oil
- 1 large egg
- 1/3 cup milk
- 1 tsp vanilla extract
- 6 to 8 ounces fresh or frozen blueberries (about 1 cup frozen blueberries)
STREUSEL INGREDIENTS
- 1 cup flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup Butter, cubed into 1/2″ cubes
- 1/2 tsp Cinnamon
- 1 dash Clove
- Pinch of Salt
ICING INGREDIENTS
- 1/2 Cup Powdered Sugar
- 1-2 Tbsp Milk
- 1/2 tsp Vanilla Extract
- 1-2 Dashes Cinnamon
- 1 dash Cloves
- 1 dash Allspice
Method
STREUSEL METHOD
Using your hands, blend the butter into the flour mixture until it begins to hold together when gently squeezed.
Crumble any large clumps to desired size and gently mix
ICING METHOD
Combine all ingredients and add cornstarch, flour or more sugar to help balance consistency.
BAKING METHOD
Preheat oven to 350º
Mix flour, sugar, salt and baking powder until thoroughly combined.
Gently stir in blueberries so they are completely coated in flour.
In a separate bowl, combine vegetable oil, egg, milk and vanilla extract and combine until smooth.
Pour wet ingredients into flour mixture and gently fold until smooth.
Place 1/4 cup portions into a parchment lined muffin tin, then sprinkle a layer of streusel on each muffin.
Bake for 20-25 minutes or until a toothpick comes out of the center clean.
Let cool to room temp on a cooling rack and drizzle icing over the top with a spoon. Allow icing to set and enjoy!
