Portuguese Sopas
I was given a version of this Portuguese Sopas recipe back when I worked in the commercial printing industry assisting one of our Portuguese Newspaper customers. During conversation, I asked her about Sopas and if she had a recipe. She said she did and would email me the Portuguese Sopas recipe that their cook made for their Festas. So, thank you Susan! I’ve since modified the recipe to work better in a slow cooker. Enjoy!
Easy Slow Cooker Portuguese Sopas
This Portuguese Sopas recipe is so easy to make! Tender beef, cabbage and a surprising brightness from the addition of mint create a complex and aromatic flavor. Typically served over bread, you’ll be excited to put this one in your recipe book. Omit the bread for a low-carb version in this Sopas Recipe!

Ingredients
- 3-5 Lb. Chuck Roast
- 2 Cups Water, more as needed)
- 1 Onion, medium dice
- 2 cloves Garlic, minced
- 1 Cup Mint Leaves, whole
- 3 Bay Leaves
- 1 tsp. Allspice
- 1/2 tsp. Ground Cloves
- 1 tsp. Black Pepper
- 1 tsp. Kosher Salt
- 1 Head Cabbage, quartered
- 1 Loaf day-old French Bread
Method
Salt meat to taste. It’s a big chunk, so don’t be light
Combine Allspice, Cloves, and pepper. Thoroughly rub into the meat
Add Onions, Garlic, Mint, and Bay Leaves to a slow cooker set to high.
Place meat on top, add enough water to just cover the meat.
Cook for 3-4 hours, or until meat is fork tender. Add Cabbage in the last 30 minutes of cooking.
This recipe is traditionally served over day-old French bread but is easily made Low Carb/Keto if you omit it.
